MOLLY WILKINSON, PASTRY CHEF AND FOUNDER OF MOLLYJWILK PASTRY

A Dallas-born pastry chef living and baking in Versailles, alongside my fearless pup, Elliot. After moving from Texas to Paris to study pastry at Le Cordon Bleu, I fell head-over-crème-brulée in love with French pastries.

Nearly every day of the week, you can find me in my kitchen experimenting with new twists on old classics and simplifying French recipes so they’re fun and accessible for everyone!

HEY, MOLLY! I HAVE A QUESTION…

I’m a new or intermediate baker. Is the Online Pastry School for me?
Oui, oui! Making French baking fun and accessible for all bakers—regardless of your prior baking experience—is my passion. Everything I teach is tried, tested, and tweaked to perfection so you can easily follow along whether you’re a baking beginner or you’re a more advanced baker looking to add French pastry to your skillset.
How is the Online Pastry School different from your Live Public Baking Classes?
Excellent question! The Online Pastry School is a 12-month experience where members get access to a Live Baking Syllabus so we can bake together every month, Baking Challenges to win prizes(!), and a library of pastry courses to make delicious pastries from scratch. Members are also supported inside our private online community.

The Online Pastry School is perfect for you if you’re looking for an instructional, fun space where you can spend more time doing what you love: creating sweet treats in the kitchen (and eating them too 🤭)!

On the other hand, the Public Baking Classes are perfect for you if you want to attend a one-time baking class. *Class topics are released each month and spots are limited!

*Psst… topics included in the Online Pastry School will not be offered as one-time public classes. So if you see something on the live syllabus you’d love to make together, hop inside the Online Pastry School before doors close on September 30th!
Are pastry courses sold separately?
They are not! Pastry courses are only available to Online Pastry School members. When you join, you get access to a whole suite of video tutorials to bake all your favorite pastries from scratch—with new courses added every month!
Do I need special baking equipment to make the recipes?
Nope! If you haven’t noticed already, keeping it simple in the kitchen is my love language. You probably have all the things we’ll use in the School at your home already, but if you need to grab a few extra items, rest assured I’m always mindful of offering budget-friendly recommendations or alternatives wherever possible.
What if I can’t make some of the live sessions?
To accommodate bakers across the globe, our Bake Together Classes take place multiple times each month.

For my friends in North America, classes are hosted at 1 pm EST (12pm CST, 10am PST).

For my friends in Australia, Africa, and Asia, classes are hosted at 4pm Perth (6pm Sydney, 8pm Auckland).

And for my European friends, you're in luck as both times will suit you at either 7pm Paris or 10am Paris.

If you can’t make a live class, no worries! All live courses are recorded and banked so you can dive in whenever’s most convenient for you.
Can I cancel at any time?
Of course! If you need to cancel your monthly membership, you’re able to do so at any time. If after you cancel you’d like to rejoin us, you’re always welcome to enroll in the school when we open doors for enrollment again next year.
Can my family attend the Bake Together Classes too?
Yes! You’re welcome to invite your friends and family into your kitchen to tune into our live baking classes together. In my view, the more pastry chefs, the merrier!
The Online Pastry School is now open for enrollment once per year? Is that right?
Yes! In previous years, the Online Pastry School was open year-round. This year, we’ve switched to a once-per-year enrollment so I can fully support the members inside with our new live baking syllabus as we build on our baking skills by making a variety of amazing pastries together.
What if I want to enroll for longer than 12 months?
Every year I dream up a brand new Online Pastry School live baking syllabus, so you’re more than welcome to stick around for new treats and techniques next year too!
How long do I have access to the material in the school?
You’ll have access to all the materials in the school plus all your member perks for the duration of your membership.
When will enrollment open again?
Enrollment for Online Pastry School will open again next year, during the 2023 fall season!
